I made Daikon Carrot Salad the other day and it came out pretty well. I find my daikon at the health food store. I imagine lots of yuppie stores carry this root now.
The recipe called for julienning both the daikon and the carrot but I just used a shredder.
I used a small daikon root and one carrot, but this is one of those recipes that could be easily doubled or tripled.
First you get them all shredded up and then add one tsp of salt and let it sit for awhile. Then knead it and squeeze out the liquid.
While that's sitting mix One Tablespoon of Rice Vinegar with one Tablespoon of Sugar. Once you've got the carrot/daikon kneaded pour the vinegar/sugar mixture over it and let it sit about a half hour or longer.
I also did the same thing with a cucumber cut into very thin slices. I didn't knead it so much as let it sit with salt and then pour the vinegar over it. Still tasty.
This makes a pretty tasty addition to Ginger Pork or I imagine to anything mildly spicy. Great little bento addition.
